Go to Lon Lon Ranch and walk over to one of the fences that Epona can hop over along the sides of the map. Simply use a staircase bomb hover near the fence and backflip over it into the loading zone. Because the game developers assumed that the only way you can get over the fence was with epona, it will automatically give you Epona. If you reenter Lon Lon Ranch, everything will be as if you beat Ingo. She's yours to keep!
